Peanut Butter Kiss Cookies (gluten-free)
Makes 4 (2-inch) cookies
½ cup butter
¾ cup peanut butter
⅓ cup brown sugar
⅓ cup white sugar
1 egg
2 tablespoons milk
1 teaspoon vanilla
1½ cup gluten-free flour mix

- Preheat oven to 375 degrees.
- Cream butter and peanut butter until smooth. Add sugars and mix until combined and fluffy.
- Add egg, milk and vanilla; stir until combined.
- Mix flour, xanthan gum, baking soda and salt. Stir into peanut butter mix.
- Form into balls and roll in granulated sugar. Bake 8-10 minutes.
- When cookies come out of the oven, immediately press unwrapped kisses into the center of each cookie.
- Remove to a rack and let cool.
